Baking Catastrophe?

Okay. I know I’ve been offline for a really long while and I really do apologise. I actually miss blogging, even more so after reading Girl Online by Zoella. In fact, Girl Online has really inspired me to try lifestyle blogging. All my post will still be in the same categories but the content will be more personal. Like this post for example!

So, I often bake and bring treats to school for my friends. I’m really glad that everyone enjoys my baked goods (mainly cupcakes) but what they don’t know is the process of baking.

Today, I tried a new recipe I found online. Most of the time, I set my ingredients aside on the counter to make sure that I have everything. Most of the time. I don’t know what happened to me today, but I went straight into the baking process. The first disaster was that I forgot to leave the butter out to soften. I often do this a lot so it’s not surprising. I tried microwaving it but stopped immediately when I saw a spark from the foil *sigh* Being in a hurry, I used it just like that.

The second problem were the eggs. I apparently needed 4 but we happened to only have 2 *sighs again* So, I used the 2 and used 1/4 a cup of vegetable oil to replace each missing egg. Then, I realised we only had Canola oil. But oh well, I used it anyway.

In the end after all the disasters, the cupcakes turned out okay. The top was a bit hard but inside was so moist and fluffy. I happen to be eating one right now 🙂 I was going to make buttercream frosting but I was tired after all the stress from making the cupcakes itself HAHAHAHAHA

Mint Chocolate Recipe

-2 cups of milk cooking chocolate

-3/4 cup of white cooking chocolate

-1 can condensed milk

-2 teaspoons of vanilla essence or 1 teaspoon of vanilla bean paste

-green food colouring (use as many drops as you want

-peppermint paste or extract (depends on how strong you want the flavour to be)

2017-03-15 (1)Melt milk chocolate, 1 cup of condensed milk and vanilla essence. Pour in a tray covered with parchment paper and chill in the fridge.

Then, melt the white chocolate with the remaining condensed milk, peppermint essence and food colouring. Be careful when melting (I kinda burnt mine a little)

2017-03-15 (5)Sprinkles are optional but they definitely make the chocolate look prettier.

Meringue Recipe

2017-03-08A couple of days ago I was craving something sweet, so I decided to make meringues. It was my first time and if I do say so myself, I found it rather successful. I found an easy recipe online. Just search meringue recipe in your browser and click on the recipe by http://www.taste.com.au. You actually have to do that cause the recipe is below:-

You only need 4 basic ingredients: 4 room temperature egg whites, pinch of salt, 1 cup of castor sugar, 1/2 tsp of vanilla essence (gets rid of eggy taste)

1.Preheat oven to 120C and line your baking tray.

2. Whisk egg whites and salt with an electric mixer till soft peak forms. Soft peak is when you turn the whisk upside down and they hold for a second before melting back again. Add a tablespoon of sugar at a time and whisk till it dissolves.

3.Whisk on high for 3 minutes for best results and add the vanilla.

4.You can use 2 spoons to spoon the mixture into dollops. That didn’t work for me because my mixture was too runny :p. I poured it all on the tray and cut it into pieces after it baked.

5.Reduce the temperature of the oven to 90C and bake for 1 and a half hours. It can last up till a week.
